Exceptional coffee doesn't happen by accident.
Here's what goes into every bag of Elo, and why it matters.
How we source
Seed to cup. Transparency at every step.
Great coffee doesn't start at the roaster. It starts at the farm: with the soil, the altitude, the rainfall, and the hands that tend to every plant. At Elo, we believe what happens before the roast matters just as much as what happens after it. That's why we partner with Café Imports, a specialty coffee importer whose deep relationships with producers around the world give us access to some of the finest coffee-growing regions on earth.
Every coffee we source is fair trade and organic. Fair trade means the farmers who grow our beans are paid fairly for their work, not squeezed by middlemen or market fluctuations. Organic means the beans are grown without synthetic pesticides or fertilizers, which is better for the land, better for the farmers, and better for what ends up in your cup.
When sourcing is this intentional, the difference shows up in the cup. Cleaner flavor, better balance, and a taste that reflects the care that went into every step of getting it to you.

What specialty-grade means
Specialty-grade isn't a marketing term. It's a measurement.
Specialty-grade coffee is scored on a 100-point scale by the Specialty Coffee Association - the global authority on coffee quality. Most of the coffee you'll find at mainstream coffee shops and grocery store shelves scores in the 60-70 point range. It's drinkable. It's familiar. But it's not exceptional.
To earn a specialty designation, a coffee must score 80 points or higher, evaluated across criteria like aroma, flavor, aftertaste, acidity, body, and balance. It's a rigorous standard that the majority of coffee on the market never reaches. These are the only beans that make it into a bag of Elo.
We're confident you'll taste the difference.
Why we do Third-Party Testing
You deserve to know what's in your cup, and what's not.
Transparency means nothing without evidence. That's why we made third-party testing a non-negotiable part of how Elo operates. Every batch of Elo coffee is tested through Eurofins, a global leader in food and product testing operating under ISO 17025 accredited laboratories, the gold standard for testing accuracy and reliability. We screen for five things that most coffee drinkers never think to ask about:

This is what exceptional tastes like.
Smooth and clean with a brightness that opens up as you drink it.
Complex enough to reward the curious, approachable enough to be your every morning cup.
Full-bodied and balanced, with none of the bitterness or acidity that follows you through the rest of your day.

Whether you enjoy a bright, fruit-forward coffee or a bold, rich roast, every bag of Elo is specialty-grade, thoughtfully sourced, and roasted to bring out the best in every bean.
Whole bean is always the freshest option. Grinding just before brewing preserves the flavor and aroma that makes specialty coffee worth drinking. If you have a grinder at home, we always recommend whole bean. That said, our medium ground is a great option if you prefer the convenience of pre-ground and works well for drip coffee makers, pour-over, and single-serve machines. Either way, you're getting the same exceptional Elo coffee - it just comes down to how you like to brew.
Store your Elo coffee in a cool, dry place away from direct sunlight, heat, and moisture. After opening, reseal your Elo bag or transfer to an airtight container to keep it fresh. For the best cup, avoid the fridge or freezer, and if you're using whole bean, grind just before brewing.
Whole bean coffee stays freshest for up to 6 weeks after opening, while ground coffee is best enjoyed within 2 to 4 weeks. Keep your coffee in its original Elo bag, sealed tightly, and store it in a cool, dry place away from heat, light, and moisture. Avoid storing coffee in the refrigerator or freezer, as condensation can affect its flavor.
Every Elo bag includes a one-way freshness valve and is nitrogen-flushed before sealing to help preserve the coffee's peak flavor until you're ready to enjoy it.
The best cup of coffee starts with the right ratio. We recommend 1 gram of coffee for every 16 grams of water (a 1:16 ratio), which creates a balanced, flavorful cup that lets the unique character of each Elo roast shine.
For an easy starting point:
- 12 oz (355 ml) water: 22 g coffee (about 4 tablespoons)
- 16 oz (475 ml) water: 30 g coffee (about 5½ tablespoons)
- 8-cup (40 oz) brewer: 70 g coffee
For the best results:
- Grind fresh just before brewing.
- Use filtered water heated to 195–205°F (90–96°C).
- Adjust your grind size for your brewing method (coarse for French press, medium for drip, fine for espresso).
- Fine-tune the ratio to your taste—use a little more coffee for a bolder cup or a little less for a lighter one.
We've designed every Elo coffee to brew beautifully, no matter how you make it. Whether you prefer drip coffee, pour-over, French press, AeroPress, espresso, or cold brew, our specialty-grade beans are roasted to deliver an exceptional cup. Every brewing method brings out different flavors and characteristics, so we encourage you to experiment and discover your favorite way to enjoy Elo.
All Elo coffee roasts can be brewed in an espresso machine, and each roast will produce its own unique flavor profile. If you prefer a richer, warmer espresso with notes of dark chocolate and caramel, we recommend our Espresso roast, which was crafted specifically for that classic espresso experience.
